Cinnamon Citrus Infused Rice Pilaf

INGREDIENTS

2 tbsp. Olive oil

2 cups Yellow onions, fresh, chopped

2 tbsp. Garlic, fresh, minced

2 cups White rice, long grain, raw

1 tsp. Cumin seed

1 tsp. Kosher salt

4 cups Chicken broth

1  Stick cinnamon

1/2 cup Smucker’s® Sweet Orange Marmalade (#5150000315)

1/2 cup Slivered almonds, toasted

 

DIRECTIONS

  1. Combine oil, onions and garlic in heavy sauce pan; sauté over low heat until onions are translucent.
  2. Add rice, cumin and salt; stir over low heat for 2 minutes.
  3. Add chicken broth and cinnamon; bring to a boil. Reduce heat to low; cover with tight lid and simmer for 15 minutes. Let stand 5 minutes.
  4. Add Smucker's® Sweet Orange Marmalade and almonds to rice pilaf; toss gently to blend. Keep warm.
