Chargrilled Chicken with Mango Peach Salsa

INGREDIENTS

2 cups Mango chunks, thawed, diced

1/2 cup Red, yellow and orange bell peppers, fresh, diced

1/2 cup Red onion, fresh, diced

1/2 cup Smucker’s® Peach Preserves (#5150000316)

2 tbsp. Jalapeno peppers, fresh, minced

1 tbsp. Lime juice, fresh

1 tbsp. Cilantro, fresh, chopped

12  Boneless, skinless chicken breast filets, 6 oz., chargrilled, warm

 

DIRECTIONS

  1. Combine mango, bell peppers, red onion, Smucker's® Peach Preserves, jalapenos, lime juice and cilantro in bowl; toss to blend. Cover and chill to hold.
  2. To assemble single serving: Diagonal-slice 1 grilled chicken breast filet and shingle on plate. Serve with ¼ cup salsa.
